Study Purpose

The purpose of the Soy Fiber study is to determine the maximum tolerated dose of dietary fiber from soy in older adults.

About the Study

Eligible participants will be provided with foods for three weeks and will be required to eat these foods every day along with foods usually consumed.

A stool sample will need to be provided on a weekly basis to measure the response to the study foods eaten.

Study Design

Number of Visits:

  • 1 screening visit
  • 4 study visits

Procedures:

  • Medical history
  • Height and weight
  • Vital signs (pulse and blood pressure, etc.)
  • Blood draws
  • Nutrition counseling

Study Qualifications

To qualify for this research study, participants should:

  • Be between the ages of 70-85 years old
  • Have a BMI between 30-40 calculate your BMI
  • Have no evidence of type II diabetes

Study Duration

Participation in the study will last approximately 3-4 weeks.

Compensation

Compensation of up to $125 is offered for the completion of this study.
